Allahabad bakeries

Introduction
The city of Allahabad hosts about 3000 SMEs. They include about 130 bakeries that are scattered across the city. The bakeries cater mainly to local markets, and can be categorized based on their products into three types: (1) paav (2) rusk & cake and (3) biscuit, pastry & others. Most of the bakeries (about 90) have a turnover of less than Rs 1 lakh; a few larger units have a monthly turnover of more than Rs 5 lakhs. The bakeries mainly rely on wood and diesel to provide heat for the ovens, and on electricity for the mixing of ingredients.
